Prawn, avocado, red onion salad

There’s nothing sexy about the words “healthy eating” is there?

 

My sexy definition is: eating food that sets your body on fire – so you can enjoy this precious life with those you love, to be the healthiest person and live so many young years.  To feel freedom.

 

My client sent me this which set me on fire:

She was so happy, about to fly over the Atlantic and one of her fears was that she would have to use a seat belt extension.

 

She achieved these results by falling in love with healthy eating.

 

Here’s a recipe for you to try – Prawn Avocado Salad.  It’s got 20g of protein 🙂

 

Recipe:

-40g rocket
-40g baby spinach
-30g finely chopped red onion (soak in 1 tbsp. cider vinegar for 10 minutes)
-80g chopped avocado
-100g pre-cooked jumbo prawns
-1 tbsp lemon juice
-1 tbsp extra virgin olive oil
(see the cider vinegar you soak the onions in)
